I've been making mostly repeats lately, including some birthday
choices. This one is a few weeks old, but it's at least
something new.

Fettucine with Sun Dried Tomato and Pistachio Pesto

2 cups sun dried tomatoes
1/4 cup parmesan cheese
1/2 cup shelled pistachios
5 shallots
5 cloves garlic
Olive oil
2 lbs fettucine

Soak sun dried tomatoes in hot water for 20 minutes, or until
they are soft. Put them in a food processor or blender with
the rest of the ingredients and start processing. Add olive
oil a little at a time, using just enough to make a nice paste.

Cook fettucine, drain, and toss with paste. Serve with
parmesan cheese.
