Another Mexican Caesar salad dressing, inspired by a web search
and substituting what I had in the house.
1/3 cup roasted pistacios (likely should have been pepitas)
2 garlic cloves, peeled
1/4 teaspoon ground black pepper
1 teaspoon salt
2 tablespoons olive oil
1/4 cup red wine vinegar
3 tablespoons crumbled bleu cheese (didn't have a mexican cheese)
2 tablespoons parmesan cheese (didn't have a mexican cheese)
20-30 cilantro leaves
3/4 cup mayonnaise (I use non-fat)
Blend in a food processor and add water to thin to desired
consistency (3-4 tablespoons?)
Seems like a weird mix, but it did taste Mexican.
