First of all, let me warn you in advance about the amount of
salt. I find that if this sits for a while, it needs more, but
if you serve immediately after tossing it needs less.
Definitely taste as you add.

The amount of dressing here is for one head of cabbage, plus
some assorted other vegetables. I used a cucumnber, four or
five roma tomatoes, four or five radishes, four or five
scallions, and a red bell pepper.

The dressing is

1/4 cup fresh lemon juice
1/4 cup red wine vinegar
2 tablespoons dried oregano leaves
1 tablespoon ground cumin
1/4 teaspoon ground black pepper
2 tablespoons garlic salt, or to taste (see above)
1/3 cup olive oil
