J: Here's an unusual one from me -- a dessert. Usually, I let guests bring dessert, but last week fresh blueberries were on sale and I bought way too many. However, I am too lazy to make a real pie crust or anything like that. Quick Blueberry Cobbler Filling 6 cups blueberries 1/2 cup sugar 3/4 cup water 1/4 cup orange juice 1/2 tsp vanilla 1/2 tsp cinnamon 1 tablespoon cornstarch Heat until simmers and thickens. Pour into 13x9 glass baking dish. Top 2 cups Bisquik 2/3 cup milk 2 tablespoons sugar Mix until batter/dough forms. Sprinkle with Bisquik and dump onto floured (Bisquiked?) board. Roll into a roughly 13x9 shape, maybe 1/4 inch thick. Place over the top of the blueberries in the pan. Don't worry if you have to do it in small pieces since the dough may not transfer easily in all one piece. Make a topping mixture with 1/3 cup Bisquik 1/3 cup brown sugar 1/2 tsp cinnamon 2 tablespoons margerine Mix with a fork until crumbly and sprinkle over the top of the Bisquik layer. Bake for 25 minutes at 375. Yum!
